Our new gluten-free rice noodle dish is inspired by the fragrant Chicken Pho noodle soups of Vietnam.
“I’m not a great fan of ‘hot’ spicy food but I find the amount of heat in this Chicken Pho enough to make them flavourful and interesting. They make an excellent quick, light, meal by themselves but it’s easy enough to transfer the made-up pot to a larger bowl and top with cooked, sliced chicken breast for a more substantial meal. I always make sure I have a stash in my cupboards now!”
